Scones Recipe

Plain flour

Baking powder

Butter, diced

Egg, beaten

Milk

Beaten egg, to glaze

Method :
  • Preheat the oven to 220oC/425oF/Gas 7. Lightly butter a baking sheet.
  • Sift the flour and baking powder together, then rub in the butter.
  • Make a well in the centre of the flour mixture, add the egg and milk.
  • Mix to a soft dough using a round bladed knife.
  • Turn out the scone dough on to a floured surface, and knead very lightly until smooth.
  • Roll out the dough to about a 2 cm thickness and cut into 10 or 12 circles using a 5 cm plain or fluted cutter dipped in flour.
  • Transfer to the baking sheet, brush with egg, then bake for about 8 minutes, until risen and golden.
  • Cool slightly on a wire rack before serving.
