Raisin Bran Buns Recipe

Bicarbonate of soda

Ground cinnamon

Dark brown sugar

Method :
  • Preheat the oven to 200oC/400oF/Gas 6. Lightly grease 15 bun tray cups.
  • Put the butter or margarine in a saucepan and melt over a gentle heat. Set aside.
  • In a mixing bowl, sift together the flour, bicarbonate of soda, salt and cinnamon. Add the bran, raisings and sugar and stir until blended.
  • In another bowl, mix together the egg, buttermilk, lemon juice and melted butter. Add the buttermilk mixture to the dry ingredients and stir in lightly and quickly until just moistened. Do no mix until smooth.
  • Spoon the mixture into the prepared bun tray cups, filling them almost to the top.
  • Half-fill any empty cups with water. Bake until golden, about 15-20 minutes.
  • Remove to a wire rack to cool slightly or serve immediately.
