Prune and Peel Rock Buns Recipe

Plain flour

Baking powder

Demerara sugar

Chopped ready to eat dried prunes

Chopped mixed peel

Lemon, finely grated

Sunflower oil

Skimmed milk

Method :
  • Preheat the oven to 200oC/400oF/Gas 6. Lightly oil a large baking sheet. Sift together the flour and baking powder, then stir in the sugar, prunes, peel and lemon rind.
  • Mix the oil, and milk, then stir into the mixture, to make a dough which just binds together.
  • Spoon into rocky heaps of the baking sheet and bake for 20 minutes, until golden. Leave to cool on a wire rack.
