Salt

Butter

Milk

Method :
  • Preheat the oven to 230oC/450oF/Gas 8.
  • Sift the flour and salt into a bowl and, using a pastry blender or your fingers, rub in the butter until the mixture resembles fine breadcrumbs.
  • Add the sugar and chopped dates, and stir to blend.
  • Make a well in the centre of the dry ingredients and add the milk.
  • Stir with a fork until the mixture comes together in a fairly soft dough.
  • Turn the dough out on to a lightly floured surface and knead gently for 30 seconds.
  • Roll it out to a 2cm thickness.
  • Cut out circles with a biscuit cutter. Arrange them, not touching, on an ungreased baking sheet, then glaze with the beaten egg.
  • Bake in the oven for 8-10 minutes, or until well risen and golden brown.
  • Using a palette knife, transfer the scones to a wire rack to cool completely.
