Wholemeal Banana Nut Loaf

Butter, at room temperature
Caster sugar
Eggs, at room temperature
Plain flour
Bicarbonate of soda
Salt
Ground cinnamon
Wholemeal flour
Large ripe bananas
Vanilla essence
Chopped walnuts |
Method :
- Preheat the oven to 180oC / 350oF /
Gas 4. Line a 23 x 13 cm loaf tin with greaseproof paper and then
grease the paper.
- With an electric mixer, cream the
butter and sugar together until light and fluffy. Add the eggs, one at a
time, beating well after each addition.
- Sift the plain flour, bicarbonate of
soda, salt and cinnamon over the butter mixture and stir to blend.
- Then stir in the wholemeal flour.
- With a fork, mash the bananas to a
puree, then stir into the mixture. Stir in the vanilla and nuts.
- Pour the mixture into the prepared tin
and spread level. Bake until a skewer inserted in the centre comes out clean, about
50-60 minutes.
- Leave to stand for
10 minutes before transferring to a wire rack to cool completely.
