Orange and Honey Tea Bread
Ingredients : Makes one 23 x 13cm loaf
Bicarbonate of soda
Egg, at room temperature, lightly beaten
Grated orange rind
Freshly squeezed orange juice
- Preheat the oven to 160oC /
Gas 3. Line the base and sides of a 23 x 13 cm loaf tin with greaseproof paper and grease
- Sift the flour, baking powder,
bicarbonate of soda and salt together in a bowl.
- Cream the margarine until soft. Stir
in the honey until blended, then stir in the egg. Add the orange rind
and stir to combine thoroughly.
- Fold the flour mixture into the honey
and egg mixture in three batches, alternating with the orange juice.
Stir in the chopped walnuts.
- Pour into the prepared tin
and bake in the oven until a skewer inserted in the
centre comes out clean, about 60 - 70 minutes. Leave for 10 minutes
before turning out on to a wire rack to cool completely.
