Fresh orange juice
Eggs, lightly beaten
Butter or margarine, melted
Fresh cranberries or bilberries
Grated rind of 1 large orange
- Preheat the oven to 180oC/350oF/Gas 4.
Then line a 23 x 13cm/9 x 5in loaf tin with greaseproof paper and grease
- Sift the flour, sugar, baking powder
and salt into the mixing bowl. Then stir in the orange rind. Make a well
in the centre and add the fresh orange juice, eggs and melted butter or
- Stir from the centre until the
ingredients are blended, do not over mix. Add the berries and walnuts
and stir until blended.
- Transfer the mixture to a prepared
tine and bake until a skewer inserted in the centre of the loaf comes
out clean, about 45 - 50 minutes. Leave to cool in the tin for 10
minutes before transferring to a wire rack to cool completely.
