Bottled or home-made apple sauce

Butter or margarine, melted

Dark brown sugar

Caster sugar

Plain flour

Baking powder

Bicarbonate of soda

Grated nutmeg

Currants or raisins

Pecan nuts or walnuts, chopped

Method :
  • Preheat the oven to 180oC / 350oF / Gas 4. Line the base and sides of a 23 x 13 cm loaf tin with greaseproof paper and grease the paper.
  • Break the egg into a bowl and beat lightly. Stir in the apple sauce, butter or margarine and both sugar. Set aside.
  • In another bowl, sift together the flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg.
  • Fold the dry ingredients, including the currants or raisins and the nuts, into the apple sauce mixture in three batches.
  • Pour into the prepared tin and bake in the oven until a skewer inserted in the centre of the loaf comes out clean, about 1 hour. Leave to stand in the tin for 10 minutes, then turn out on to a wire rack to cool completely.
