Apple Loaf Recipe

Bottled or home-made apple sauce
Butter or margarine, melted
Dark brown sugar
Caster sugar
Plain flour
Baking powder
Bicarbonate of soda
Salt
Ground cinnamon
Grated nutmeg
Currants or raisins
Pecan nuts or walnuts, chopped |
Method :
- Preheat the oven to 180oC /
350oF /
Gas 4. Line the base and sides of a 23 x 13 cm loaf tin with greaseproof paper and grease
the paper.
- Break the egg into a bowl and beat
lightly. Stir in the apple sauce, butter or margarine and both sugar.
Set aside.
- In another bowl, sift together the
flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg.
- Fold the dry ingredients, including
the currants or raisins and the nuts, into the apple sauce mixture in
three batches.
- Pour into the prepared tin
and bake in the oven until a skewer inserted in the
centre of the loaf comes out clean, about 1 hour. Leave to stand in the
tin for 10 minutes, then turn out on to a wire rack to cool completely.
