Toffee Meringue Bars Recipe

Butter

Dark brown sugar

Egg

Vanilla essence

Plain flour

Salt

Grated nutmeg

 

 

Egg white

Salt

Golden syrup

Caster sugar

Walnuts, finely chopped

Method :
  • Combine the butter and brown sugar in a saucepan and heat until bubbling. Set aside to cool.
  • Preheat the oven to 180oC/350oF/Gas 4. Line the base and sides of a 20cm square cake tin with greaseproof paper and grease the paper.
  • Beat the egg and vanilla into the cooled sugar mixture.
  • Sift over the flour, salt and nutmeg and fold in. Spread in the base of the cake tin.
  • For the topping, beat the egg white with the salt until it holds soft peaks.
  • Beat in the golden syrup, then the sugar, and continue beating until the mixture holds stiff peaks.
  • Fold in the nuts and spread on top.
  • Bake for 30 minutes. Cut into bars when completely cool.
