Spicy Pepper Biscuits Recipe

Plain flour
Cornflour
Baking powder
Ground cardamon
Ground cinnamon
Grated nutmeg
Ground ginger
Ground all spice

Freshly ground black pepper
Butter, or margarine, at room temperature
Light brown sugar
Vanilla essence
Finely grated lemon rind
Whipping cream
Finely ground almonds
Icing sugar |
Method :
- Preheat the oven to 180oC/350oF/Gas
4. Sift the flour, cornflour, baking powder, spices, salt and pepper
into a bowl.
- Cream the butter or margarine and
brown sugar until light and fluffy. Beat in the vanilla essence and
lemon rind.
- With the mixer on low speed, add the
flour mixture alternately with the cream, beginning and ending with
flour. Stir in the ground almonds.
- Shape the dough into 2cm balls. Place
them on ungreased baking sheets about 2.5cm apart.
- Bake until golden brown underneath,
about 15-20 minutes.
- Leave to cool on the baking sheets for
about 1 minute before transferring to a wire rack to cool completely.
- Before serving, sprinkle lightly with
icing sugar.
