Cream the butter and sugar until light
and fluffy. Add the yolks, orange juice and rind, and continue beating
to blend.
In another bowl, sift together the
flour, cornflour, salt and baking powder. Add to the butter mixture and
stir until it forms a dough.
Wrap the dough in greaseproof paper
and chill for 2 hours.
Preheat the oven to 190oC/375oF/Gas
5. Grease two baking sheets. Roll spoonful of the dough into balls and
place 2.5cm - 5cm apart on the baking sheets.
Press down with a fork to flatten.
Bake until golden brown, about 8-10
minutes.
Using a palette knife, transfer to a
wire rack to cool.
