Oaty Coconut Biscuits Recipe

Quick cooking oats

Desiccated coconut

Butter

Caster sugar

Dark brown sugar

Eggs

Milk

Vanilla essence

Plain flour, sifted

Salt

Ground cinnamon

Method :
  • Preheat the oven to 200oC/400oF/Gas 6.
  • Spread the oats and coconut on a baking sheet. Bake for 8 - 10 minutes.
  • Cream the butter and sugar.
  • Beat in the eggs, milk and vanilla.
  • Fold in the dry ingredients.
  • Add the oats and coconut.
  • Drop spoonful of mixture on two greased baking sheets.
  • Bake for 8-10 minutes.
  • Cool on a wire rack.
