Oatmeal Lace Rounds Recipe

Quick cooking porridege oats
Dark brown sugar
Caster sugar
Plain flour
Salt
Egg, lightly beaten
Vanilla essence
Pecan nuts or walnuts, finely chopped |
Method :
- Preheat the oven to 180oC/350oF/Gas
4. Lightly grease two baking sheets.
- Melt the butter or margarine in a
saucepan over a low heat. Set aside.
- In a mixing bowl, combine the oats,
brown sugar, caster sugar, flour and salt. Make a well in the centre and
add the butter or margarine, egg and vanilla.
- Mix until blended, then stir in the
chopped nuts.
- Drop rounded teaspoonfuls of the
mixture about 5cm apart on the prepared baking sheets.
- Bake in the oven until lightly browned
on the edges and bubbling all over, about 5-8 minutes.
- Cool on the baking sheets for 2
minutes, then transfer to a wire rack to cool completely.
