Nut Lace Wafers Recipe

Blanched almonds

Butter

Plain flour

Caster sugar

Double cream

Vanilla essence

Method :
  • Preheat the oven to 190oC/375oF/Gas 5. Lightly grease two baking sheets.
  • With a sharp knife, chop the almonds as finely as possible.
  • Alternatively, use a food processor or blender to chop the nuts very finely.
  • Melt the butter in a saucepan over a low heat. Remove from the heat and stir in the remaining ingredients and the finely chopped almonds.
  • Drop teaspoonfuls 6cm apart on the prepared sheets.
  • Bake until golden, about 5 minutes.
  • Cool on the baking sheets briefly, just until the wafers are stiff enough to remove. With a palette knife, transfer to a wire rack to cool.
