Mexican Cinnamon Biscuits Recipe

Caster sugar
Plain flour
Cornflour
Ground cinnamon
Chopped mixed nuts
Icing sugar, sifted |
Method :
- Preheat the oven to 160oC/325oF/Gas
3. Lightly grease a baking sheet.
- Place the butter and sugar in a bowl
and beat until pale and creamy.
- Sift in the plain flour, cornflour and
cinnamon and gradually work in with a wooden spoon until the mixture
comes together.
- Knead lightly until completely smooth.
- Take tablespoonfuls of the mixture,
roll into 20 small balls and arrange on the baking sheet.
- Press a few chopped nuts into the top
of each one and then flatten slightly.
- Bake the biscuits for about 30-35
minutes, until pale golden.
- Remove from the oven and, while they
are still warm, toss them in a sifted icing sugar.
- Leave the biscuits to cool on a wire
rack before serving.
