Ginger Biscuits Recipe

Plain flour
Bicarbonate of soda
Ground ginger
Ground cinnamon
Ground cloves
Butter or margarine, at room temperature
Caster sugar
Egg, beaten
Treacle
Fresh lemon juice |
Method :
- Preheat the oven to 160oC/3250F/Gas
3. Lightly grease three to four baking sheets.
- Sift the flour, bicarbonate of soda
and spices into a small bowl. Set aside.
- Cream the butter or margarine and
two-thirds of the sugar together.
- Stir in the egg, treacle and lemon
juice.
- Add the flour mixture and mix in
thoroughly with a wooden spoon to make a soft dough.
- Shape the dough into 2 cm balls. Roll
the balls in the remaining sugar and place about 5 cm apart on the
baking sheets.
- Bake until the biscuits are just firm
to the tough, about 12 minutes.
- with a palette knife, transfer the
biscuits to a wire rack and leave to cool.
