Farmhouse Biscuits Recipe

Cup butter or margarine, at room temperature
Light brown sugar
Crunchy peanut butter
Egg
Plain flour
Baking powder
Ground cinnamon
Salt
Muesli
Raisins
Chopped walnuts |
Method :
- Preheat the oven to 180oC/350oF/Gas
4. Grease a baking sheet.
- Cream the butter or margarine and
sugar until light and fluffy. Beat in the peanut butter and then beat in
the egg.
- Sift the flour, baking powder,
cinnamon and salt over the peanut butter mixture and stir to blend.
- Stir in the muesli, raisins and
walnuts. Taste the mixture to see if it needs more sugar, as the sugar
content of muesli varies.
- Drop rounded tablespoonfuls of the
mixture on to the prepared baking sheet about 2.5cm/1 inch apart.
- Press gently with the back of a spoon
to spread each mound into a circle.
- Bake until lightly colored, about 15
minutes. With a palette knife, transfer to a wire rack to cool.
- Store in an airtight container.
