Cup butter or margarine, at room temperature

Light brown sugar

Crunchy peanut butter

Egg

Plain flour

Baking powder

Ground cinnamon

Salt

Muesli

Raisins

Chopped walnuts

Method :
  • Preheat the oven to 180oC/350oF/Gas 4. Grease a baking sheet.
  • Cream the butter or margarine and sugar until light and fluffy. Beat in the peanut butter and then beat in the egg.
  • Sift the flour, baking powder, cinnamon and salt over the peanut butter mixture and stir to blend.
  • Stir in the muesli, raisins and walnuts. Taste the mixture to see if it needs more sugar, as the sugar content of muesli varies.
  • Drop rounded tablespoonfuls of the mixture on to the prepared baking sheet about 2.5cm/1 inch apart.
  • Press gently with the back of a spoon to spread each mound into a circle.
  • Bake until lightly colored, about 15 minutes. With a palette knife, transfer to a wire rack to cool.
  • Store in an airtight container.
