Butter or margarine, at room temperature

Caster sugar

Egg

Vanilla essence

Plain flour, sifted

Bicarbonate of soda

Salt

Crisped rice cereal

Chocolate chips

Method :
  • Preheat the oven to 180oC/350oF/Gas 4.
  • Grease two baking sheets.
  • Cream the butter or margarine and sugar until fluffy.
  • Add the egg and vanilla essence.
  • Add the flour and bicarbonate of soda and the salt and fold in.
  • Add the cereal and chocolate chips and mix thoroughly.
  • Drop spoonful 5 cm apart onto baking sheets and bake for 10-20 minutes.
  • Transfer to a wire rack to cool
