Method :
Preheat the oven to 160oC/325oF/Gas
3. Grease two large baking sheets. In a medium saucepan over a low heat,
melt the plain chocolate and butter until smooth, stirring frequently.
Remove from the heat to cool slightly.
Beat the eggs and sugar for 2-3
minutes until pale and creamy. Gradually beat in the melted chocolate
mixture. Beat in the flour, cocoa, baking powder, vanilla and salt, just
to blend.
Add the nuts, chocolate chips and
chocolate pieces.
Drop 4-6 heaped tablespoonfuls of the
mixture on to each baking sheet 10cm apart and flatten each to a round
about 7.5cm.
Bake for 8-10 minutes until the tops
are shiny and cracked and the edges look crisp.
Remove the baking sheets to a wire
rack to cool for about 2 minutes, until the cookies are just set, then
remove them to the wire rack to cool completely.
