Chewy Chocolate Biscuits Recipe

Egg whites

Method :
  • Preheat the oven to 180oC/350oF/Gas 4.
  • Line two baking sheets with greaseproof paper and grease.
  • Using an electric mixer, beat egg whites until frothy.
  • Sift over icing sugar and coffee.
  • Add water, beat on low speed to blend, then on high until thick.
  • Fold in chopped walnuts.
  • Place generous spoonfuls of the mixture 2.5cm apart on the sheets.
  • Bake for 12-15 minutes.
  • Transfer to a wire rack to cool.
