Banana Chocolate Brownies Recipe

Large bananas, mashed

Soft light brown sugar

Vanilla essence

Egg whites

Self-raising flour

Oat bran icing sugar, for dusting

Method :
  • Preheat the oven to 180oC/350oF/Gas 4. Line a 20cm square cake tin with non-stick baking paper.
  • Blend the cocoa and caster sugar with the milk. Add the bananas, soft brown sugar and vanilla essence.
  • Lightly beat the egg whites with a fork.
  • Add the chocolate mixture and continue to beat well.
  • Sift the flour over the mixture and fold in with the oat bran. Pour into the prepared tin.
  • Cook in the oven for 40 minutes, or until firm.
  • Cool in the tin for 10 minutes, then turn out on to a wire rack.
  • Cut into squares and lightly dust with icing sugar before serving.
